I used to be the Sales Manager for Northwest Airlines in Muscat, Sultanate of Oman, from 1990 to the year 2000, when the KLM/NWA alliance decided NWA offices would closed down and only KLM would represent the Alliance.
I flew on Cathay Pacific Airways from Dubai to Hong Kong and back in 1997 and on Air France flights on the same route, one year later. Now these two flights were just single flights and I am sure it is not always the same with all CX and AF flights, but this was my impression for each of these carriers:
    Cathay Pacific:
Cathay Pacific confirmed on that flight, the right level of their product and even in this economy cabin.

In terms of comfort, 3-3-3 configuration seats and storage space under the display are probably one of the best seats available today, the inclination is also pretty good, and the pitch is reasonable.

Really nice crew, attentive and smiling, very regular shift during flight to provide drinking.

Meal, good and in reasonable quantities.

In-flight entertainment is very comprehensive, responsive and the screen is a very good quality, the headset is a bit cheap though.

Started with a little delay but arrived on time.
My Note for Cathay Pacific 8.70 / 10 Very good
    Cabin Comfort 9
    Crew 8.5
    Meals and Catering 8.5
    Entertainment (IFE, magazines…) 9
    Punctuality 8.5

    Air France
It’s that vital space which remains the essential critical point of the eco class of Air France.

Difficult to fly several hours and to move or sleep in a space that is really too narrow. It feels a bit like a sardine canned and such basic actions as tying or unlacing your shoes or picking your pen if it falls become a real obstacle course.

To sleep, rather than a mask, Air France should offer their economy class passengers a powerful sleeping pill. And I’m not even talking about going to the bathroom when you are on the window side…Short, tall people beware!

Poor service from the flight personnel.
Unworthy meals especially at breakfast which was not one: no pastries, no hot food, nothing!
Old movie video programming they rarely recycle.
    Small poor quality screen.
    No comfort.
However flight was perfectly on time both at departure and on arrival.

My Note for Air France 7.10 / 10 Average
    Cabin Comfort 6
    Crew 6
    Meals and Catering 7.5
    Entertainment (IFE, magazines…) 6
    Punctuality 10

Then again, I realise this was just one unfortunate flight, and I did have some other short-haul pleasant flights on Air France.
